Rigatoni and Meatballs
Ingredients:
1 lb. chicken and beef meatballs
1 lb. rigatoni
26.5 oz strained tomatoes
26.5 oz chopped tomatoes
2 cloves garlic
½ medium onion
2 Tablespoons olive oil
1 Tablespoon Spicy Spuds and Other Stuff Tangy Garlic Onion
1 Tablespoon Italian Seasoning
½ teaspoons sea salt
Chop the onion into small pieces. Sauté onion in olive oil until softened. Add garlic and sauté for one minute. Add all of the tomatoes, the salt and the spices. Add the meatballs. Cook for 30 minutes on medium heat. Fill a large pot with water. Boil water and add the rigatoni. Cook rigatoni according to the package. Drain rigatoni. Add the sauce and meatballs. Sprinkle with Parmesan cheese if desired. Serve hot. Enjoy! Serves 6.
