Chipotle Potato Salad
Ingredients:
6 large Yukon Gold Potatoes
1 large sweet onion diced
5 stalks of celery
1 ½ cups of mayonnaise
1 tablespoon of oil
2 tablespoons of Chipotle Spice
2 tablespoons of Tangy Garlic Onion
Juice of two limes
1/8 teaspoon of sea salt
Sauté the diced onion in the oil in a frying pan. Set aside. Boil the potatoes in a large pot of water until tender. Drain and cool the potatoes. Cut them into bite size pieces. Chop the celery into bite size pieces. In a large mixing bowl add the onion, potatoes, celery, mayonnaise, lime juice and spices. Blend thoroughly. Refrigerate until chilled. Serve cold. Makes 6 servings. Enjoy!
