Split Pea Soup
Ingredients:
1 lb. dried split peas
6 cups of chicken broth
4 medium potatoes peeled and chopped
4 stalks of celery chopped
1 cup of carrots peeled and chopped
12 ounces of kielbasa (beef) cut into pieces
3 Tablespoons olive oil
½ cup of Italian parsley
1 Tablespoon Tangy Garlic Onion Spicy Spuds and Other Stuff
.25 teaspoons of black pepper
Put dried peas in a pot. Add chicken stock, seasonings and spices. Simmer for a least 30-40 minutes until peas are tender but not cooked completely. Add chopped vegetables and kielbasa. Cook for another 25-30 minutes until peas, vegetables and kielbasa are tender. Add chopped Italian parsley. Serves 8.
