Spicy Spuds Egg Salad Sandwich with Tangy Garlic Onion
1 Tablespoon plus 1 teaspoon of Spicy Spuds and Other Stuff Tangy Garlic Onion
8 hardboiled eggs
1/2 cup mayonnaise
1 squirt of yellow mustard
¼ teaspoon of sea salt
4 English muffins or 8 pieces of your favorite bread
4 pieces of leaf, romaine, butter or iceberg lettuce
In a medium bowl, use a fork to mash the boiled eggs into half inch pieces. Add squirt of mustard, mayonnaise, spices, and salt. Blend thoroughly. Toast the English muffin halves or pieces of bread. Put one piece of lettuce on the bottom half of each English muffin or on 4 bread slices. Divide the egg salad equally between English muffins or pieces of bread. Top with remaining half of each English muffin or pieces of bread. Serves 4. Enjoy!
