Spicy Spuds Chipotle Chicken with Mango Avocado Salsa

Ingredients:
4 skinless, boneless chicken breasts (4 ounces each)
4 Tablespoons of Extra Virgin Olive Oil
1⁄2 cup of Spicy Spuds and Other Stuff Chipotle Spice
1 cup of grape tomatoes cut in half
1 cup of fresh mango chunks
1 cup of avocado chunks
1⁄2 cup of chopped fresh cilantro
2 Tablespoons of fresh lime juice
1/8 teaspoon black pepper
1/8 teaspoon of sea salt
Coat the chicken breasts with the olive oil in a mixing bowl. Add the Chipotle Spice and
coat well. Place the chicken in a 375F oven for 20-25 minutes or in an air fryer for 12-14 minutes until juices run clear. Let the chicken rest for 5 minutes. While the chicken is baking, place the mango chunks, tomatoes, lime juice, cilantro, salt, and pepper in a small mixing bowl. Carefully mix them together. Add the avocado. Divide salsa equally over each chicken breast. Makes 4 servings. Enjoy!
