Cheesy Corn Casserole
Ingredients:
2 cans of corn, drained
1 ½ cups of raw cherry or grape tomatoes
2 Tablespoons of Tangy Garlic Onion
1 ½ teaspoons of Chipotle Spice
1 ½ cups of shredded sharp cheddar cheese
3 Tablespoons of butter, melted
6 raw eggs beaten
¼ teaspoon of sea salt
1 cup of half and half
Beat eggs in a large mixing bowl. Add the half and half and seasonings. Add the melted butter. Drain both cans of corn and put into the mixing bowl. Fold in the tomatoes. Pour mixture into a 2 ½ quart glass casserole dish. Put the shredded cheese on top of the casserole. Place in a 350F oven for approximately 45 minutes or until the casserole is bubbly and set. Serve hot. Makes 10 servings.
