Barbacoa Beef
Ingredients:
Beef Brisket 2.5 pounds
½ medium onion
2 cups of low sodium beef broth
3 Bay Leaves
½ teaspoon ground oregano
½ teaspoon of ground cumin
2 Tablespoons of Spicy Spuds and Other Stuff Tangy Garlic Onion
2 Tablespoons of Spicy Spuds and Other Stuff Chipotle Spice
.25 teaspoon of black peppercorns
Put all the dry ingredients and beef broth into a blender. Blend well. Pour the ingredients into a gallon size plastic bag. Poke the beef roast several times with a fork. Place the beef roast in the plastic bag. Marinate overnight if possible. However, the roast can be made without marinating. Preheat the oven to 360F. Place the roast and the marinade in a roasting pan. Cover and roast in the oven for 40 minutes. Check the roast for tenderness. If it is not tender place back in the oven until it is fork, tender. Remove the roast from the roasting pan. Cover loosely with foil for 10-15 minutes. Slice against the grain or the beef can be shredded and fried for street tacos. Makes 10 servings. Serve hot and enjoy!
